About

Naturally fermented miso in traditional tsubu miso quality made from chickpeas and pearl barley. The taste is characterized by a strong, umami aroma.

The product is fermented and then matured; the maturing process is slowed down by pasteurization. The miso continues to mature slowly during storage at room temperature. The color slowly changes from light brown / bend to a darker brown. The darker the color, the more intense the taste of the miso.
